Avocado,Rocket and Prawn Wrap

Method

Heat a heavy -based frying pan .

Cut 1 large ripe avocado in half and remove the stone,then scoop the flesh into a bowl and add a good dash of balsamic vinigar and 2 tablespoons of mayonnaise.

Season to taste and mash with a fork to a smooth puree.

Heat  4 soft flour tortillas for 30 seconds in the frying pan ,turning once.

Spoon the avocado mash down the middle of each heated tortilla and divide

50grms (2 oz) wild rocket and 350g ( 12oz) large cooked peeled prawns between them .

Season to taste, roll up to enclose the filling. then cut  each one on the diagonal and serve .

These are great cold ..fantastic for those summer picnics .
