Chicken with Parma ham

Cooking time : 15 mins
Handful of fresh sage leaves
2 roast chicken breast fillets
4 slices Parma ham
1 tbsp olive oil
1 red onion-quatered
150g packet Boursin cheese with garlic & herbs .
1- Put a sage leaf on each chicken breast and wrap in ham .Heat oil in the pan and gently fry chicken and onion for 15 minutes ,turning from time to time
2-Meanwhile put boursin in a pan with a dash of water ,heat gently untill broken down into a rich creamy sauce .simmer then pour over the chicken and serve

Carol's top tip; to keep onions from losing their colour when cooking ,add a dash of vinegar or lemon juice -the acid brings out their bright colour
