Makes 6
2 tbsps tomatoe paste ,thinned with a little water
6 wholemeal pittas
1 tsp mixed herbs and garlic seasoning
5 tomatoes ,sliced
8 asparagus tips ,blanched
1/2 yellow pepper ,deseeded and sliced
18 caperberries in vinegar
1 tin artichoke hearts in water ,drained and quatered
2 x 125g /4 oz packet mozzarella
1-Preheat the oven to mark6/200c 185c in a fan assisted oven .
Spead a small amount of the thinned tomatoe paste onto each pitta bread , then sprinkle with the mixed herb and garlic seasoning .Cover them with the sliced tomatoes .
2- Top with the remaing ingredients finishing off with the mozzarella cheese .Bake for 12 minutes until the mozzarella has melted
