Potato & Leek Soup

1 tblsp Olive Oil

1 Chopped white Onion

1 Crushed Garlic clove

4 Med Potatoes desiree or Pink eyed (cut into 2cm cubes)

3 Leeks -thinly sliced

1.25 ltrs Veg Stock

125 ml Thick cream

Salt & Pepper to taste

1-Heat a tablespoon of oil in a large pan add the onions and garlic cook on a medium heat until softened ,add potatoes and leeks and cook for a further 5 minutes or until leeks are soft -stirring frequently .

2-Add veg stock and bring to the boil ,reduce heat and cook uncovered for 20 minutes or until potatoes are soft .

3- Remove from heat and allow to cool, stir in cream (a little at a time )add salt and black pepper to taste and gently reheat prior to serving .

If you prefere a smooth soup -blend in batches ,return to pan and heat through.

I garnish this soup with a little grated cheese on the top and serve with some lovely fresh crusty bread  -yummy ! but if you are watching the calories -i would suggest leaving off the cheese and using half fat cream -just as nice .

Just what you need on a cold winters day ... easy to make .
