POTATOE SKINS

Don't thow away those potatoe skins ,next  time you peel your potatoes cut them a little thicker ,wash and pat dry.,place in a bowl add salt.& fresh grounded  pepper or paprika  to taste (smoky paprika is nice to use if cooking them to go with barbie foods )

Or how about chilli  & salt ,  cumin and corriander ,there are so many different spices you can use to zap these great little skins up, after adding spices ,add a  table spoon of olive oil (more if required )and rub mixture into the skins making sure that they are evanly coated  turn onto a greased baking sheet /roasting pan and cook in a  pre-heated oven 200c for 25/30mins, (middle shelf ) .

Altenativley after you have rubbed  in spices of choice place in freezer bag ,freeze untill ready to use .( after skins have started to freeze ,shake bag gently  a few times to avoid them clumping together ) .

Kids love these , (they have allways been an all time favourite with my kids ) and thay taste good evan without the spices they make a great alternative to chips and a much healthier option to the chip, try them with chilli con carm and sour cream ,fantastic for  bonefire night with bangers and beans ,my favourite well  I just  love to dunk them into a  runny egg yoke ..mmm

AS WELL AS BEING HEALTHY, TASTY AND VERSITILE ,THEY ARE CHEAPER THAN CHIPS ! 

 

COCONUT MILK/GRAVY

If you have coconut milk or a good gravy left over ..simply  (cool  if hot) then pour into ice cube tray and freeze

you can  then defrost as much or as little ,as and when required.
